Mark Hovanes: It is difficult and stre! ssful but can be very rewarding. It seems that everyone comes in at the same time and orders. All of the orders must be quickly and professionally prepared. During the hours when there are no customers, there must be planning of new menus and shopping for the freshest foods. Some chefs specialize in different types of meals, e.g., vegetarian, 100-mile, ethnic cuisine, etc.If you work for a chain of restaurants, there would be less planning as the menu is decided upon at head office and the test kitchen. Many of the foods are prepared in advance and there is less preparation involved. While you attend school, work as an apprentice in a restaurant. There are chefs at different levels and you will get an idea of what is expected from eachOne of the pros is that you have the training to be able to work in any country.
